1. Coarsely grate the zucchini and carrot. Lightly salt the zucchini, let it rest for 10 minutes, then squeeze out excess water.
2. In a bowl, combine the vegetables with the eggs, grated cheese, garlic, flour, parsley, and season to taste. Mix the mixture well – it should be sticky but firm.
With wet hands, form sticks and place them in a preheated pan with a little oil.
Fry on both sides until golden brown – about 2-3 minutes per side.
Drain on a paper towel and serve with your favorite dip (garlic, yogurt, or herbs are perfect!).
